Creativity ebbs and flows. As summer approaches I am interested in primping the studio, making sure our front door is warm and welcoming. I like to focus on teaching all the people who come through how to hook. I am concerned that people who come from miles away have a good time when they get here. I don’t get the urge to start a big rug, but like to work on smaller pieces so that I can switch ideas fast if I want. Summer is about being hospitable. It is about enjoying the freshness of the season. It is about not missing out. I still hook of course. I always hook.
In the picture above you’ll see myself and the whole gang of rug hookers from Ohio, Virginia, Ontario, PEI and our own Springhill who stormed the studio for three days! We had a wonderful time creating, visiting, eating and getting to know each other better. The staff enjoyed all the excitement and working with every one of these beautiful, kind and talented women.

Food is often our main topic of discussion here at the studio We love to eat and we’d love to share some of our favourite recipes with you.
Brenda makes this lovely confection often – last week she generously brought it to the studio to share with the Katie Allman workshop group.
Easier Than Pie – Triple Coconut Cake
2 1/2 cups flour
1 cup shredded unsweetened coconut
3 tsps. baking powder
1 tsp salt (optional)
3/4 cup butter – if salted butter is used you could omit the salt listed above
1 1/2 cups granulated sugar
1 tsp. vanilla extract
1 tsp.coconut extract
1 can – 400ml – coconut milk
Spray two 9″ round pans and line with parchment paper.
Sift flour, coconut and salt in a large bowl.
In another bowl, beat butter and sugar until fluffy.
Beat eggs in one at a time.
Add vanilla and coconut extracts.
With mixer on low beat the butter mixture into the flour mixture alternating with coconut milk.
Divide batter between the two pans. Smooth tops.
Bake for 30-35 minutes in 350 degree oven.
Cool completely before frosting.
1 cup butter, softened
1 tsp coconut extract
dash of vanilla extract
3 cups icing sugar
1/2 cup melted and cooled white chocolate chips
1/4 cup milk
Beat butter in large bowl until creamy. Add coconut and vanilla extract, one cup of the icing sugar and the chocolate chips.
Beat for one minute then add the rest of the icing sugar alternating it with the milk. Beat until light, fluffy and smooth.
Place one layer of cake on large plate and spread frosting on top all the way to the edge. Put the second layer in place and frost the top of the cake, spreading the remaining frosting along the sides.
Sprinkle top with coconut.
This is a beautiful dessert.
